Ingredients:
1 chicken - 1.5kg (cut into medium size parts)
1 large onion, sliced
Pound : 6 pips garlic
: 1 inch ginger
1-1.5 tbsp black pepper powder
1-1.5 tbsp garam masala
Mix 1 tsp sugar with: 1.5 tbsp black thick soy sauce
: 1.5 tbsp light soy sauce
1 inch cinnamon
3 cardamons
4 cloves
2 star anis
2 stalks curry leaves (use only the leaves)
salt to taste
Method:
Marinate chicken with sugar- sauce mixture, pepper and garam masala for 1/2 hr.
Heat oil in wok and when hot fry dry spices till crackling.
Add slices onions and garlic-ginger paste.
When fragrant add marinated chicken.
Cook till tender and dry.
Add curry leaves and continue to cook.
Optionally you can also add 1 tbsp of roasted coconut (pounded coarsely) and fried onions.
Taste for salt.
Leave to stand in wok for 1/2 hr to infuse all the flavours before dishing out.
Best eaten with rice, rasam and vegetable especially on a chilly, raining day.
