Ingredients:
6 large tomatoes
1 large onion
2 pips garlic
1/2 thumb-sized ginger
1-2 tsp chili powder
1/2 tsp garam masala
10 cashew nuts
1 tbsp raisins
1 tsp salt
2-3 tsp sugar
2 tbsp vinegar
Method:
Dice tomatoes into small pieces.
Chop onions, garlic and ginger.
Saute onions, ginger and garlic till fragrant.
Add chilli powder and garam masala.
Put in tomatoes and cook well.
When soft, add salt, sugar and vinegar.
Finally add fried cashew and raisins
Cool down completely and put in bottle.
If refrigerated, it can keep well.
Eat as a side with rice or thosai. An excellent dish for a vegetarian meal.
