Spicy Kerala Style Pork



Ingredients:

2 lbs lean pork - remove fat and cut into small cubes

1 large onion - chopped fine

5 pips garlic

3 cm ginger

2 tbsp chili powder

2 tbsp black pepper powder

1 tbsp coriander powder

3 tsp turmeric powder

1 tsp garam masala

1 medium tomato - chopped

2 stalks curry leaves

2 tsp rice vinegar

2 tsp light soy sauce

1 chicken cube

salt and sugar to taste

water

oil


Method:


  • Cook the pork in water with 1 tsp turmeric and salt on medium heat until the pork is tender.

  • Pound the garlic and ginger to a paste.

  • When the pork is ready ensure that there is very little water left.

  • In a separate pan / wok, heat the oil and fry the garlic-ginger paste and onions until golden brown. Add the curry leaves.

  • Include the chili powder, remaining turmeric, pepper, coriander powder and garam masala. Take care not to burn.

  • Put in the chopped tomatoes and let to cook until the tomato turns into mush.

  • Fold in the cooked pork with some water.

  • Add the chicken cube, vinegar and soy sauce. Be careful that the dish isn't too salty. Add some sugar to balance the taste.

  • Continue to cook till the dish is dry.

  • Serve with capati or rice.
