Ingredients:
2 lbs lean pork - remove fat and cut into small cubes
1 large onion - chopped fine
5 pips garlic
3 cm ginger
2 tbsp chili powder
2 tbsp black pepper powder
1 tbsp coriander powder
3 tsp turmeric powder
1 tsp garam masala
1 medium tomato - chopped
2 stalks curry leaves
2 tsp rice vinegar
2 tsp light soy sauce
1 chicken cube
salt and sugar to taste

Method:
Cook the pork in water with 1 tsp turmeric and salt on medium heat until the pork is tender.
Pound the garlic and ginger to a paste.
When the pork is ready ensure that there is very little water left.
In a separate pan / wok, heat the oil and fry the garlic-ginger paste and onions until golden brown. Add the curry leaves.
Include the chili powder, remaining turmeric, pepper, coriander powder and garam masala. Take care not to burn.
Put in the chopped tomatoes and let to cook until the tomato turns into mush.
Fold in the cooked pork with some water.
Add the chicken cube, vinegar and soy sauce. Be careful that the dish isn't too salty. Add some sugar to balance the taste.
Continue to cook till the dish is dry.
Serve with capati or rice.
