Sometimes when we're feeling a little lazy on the weekends, a throw together brunch is a go-to. This time, it's pancakes, Surekha's all time favourite choice of breakfast. This is recipe SHE makes for us (yes I know, she doesn't always just eat) and it's so good and simple you'll find yourself making it for breakfast, lunch and dinner, we don't judge!
Makes 10-12 medium sized pancakes
Ingredients:
3 tbsp melted salted butter (if you are using unsalted butter then add a pinch or two) 2 eggs
1 cup milk
1 1/2 teaspoon vanilla extract (optional)
1 1/2 cups self raising flour*
1 teaspoon cinnamon (optional)
2 tbsp sugar
*Substitute for self raising flour: For each cup of flour, add in 1 1/2 teaspoons of baking powder
Method:
Melt butter in microwave but make sure it’s not too hot.
Add the ingredients in a bowl in the order listed above.**
Whisk/ mix well. Make sure batter isn’t clumpy.
Heat pan with butter.
Scoop batter using a ladle onto the pan.
Turn over the pancake once bubbles start appearing on the top surface.
**Feel free to add in bananas, chocolate chips, blueberries, strawberries, etc
Serve with maple syrup, whipped cream, chocolate syrup, butter, jam, peanut butter or some fruits. The choices are endless!
