Spicy Mix Vegetables


Ingredients


1 cup each, cubed pumpkin, potato brinjal, yam, chopped green beans and any other solid veges that you wish to add.

¼ tsp tumeric powder, salt to taste.

2 cups grated coconut & 6-8 green chillies.

2 tsp oil, 1 tsp mustard seeds, 1 tsp urad dal.


Method:


  1. In a thick-bottomed pan, heat water with tumeric and salt. When the water starts boiling, add all the vegetables.

  2. Meanwhile grind green chillies and grated coconut to a coarse paste.

  3. When vegetables are almost cooked add the coconut paste, mix and adjust salt.

  4. Bring to boil and remove from heat.

  5. Heat oil in a small pan and splutter mustard seeds.

  6. Add uran dal and fry till it turns golden brown. Pour them tempering over the vegetables.

  7. Mix well, and serve with a sprinkling of finely chopped coriander leaves.
