Something Like Kung Pao Chicken


We eat a lot of curry and we love it, even the kids. But once in a while it's good to give the taste buds and stomach a break. Here's a simple enough dish to make if you have all the ingredients at hand. Goes well with a simple clear soup or stew.


Ingredients:

3 chicken breast - cut into cubes

1 medium onion - chopped fine

5 pips garlic and 2 cm ginger - pound coarsely

3 stalks of curry leaves

1 tbsp cornstarch

1 tbsp chili powder

2 tsp black pepper powder

1 tsp Chinese 5 Spice powder

1 tbsp light soy sauce

1 tsp rice vinegar

3 tbsp chili flakes

sugar

salt

oil


Method:


  1. Marinate chicken cubes with chili powder, pepper and cornstarch. Leave for 30 minutes.

  2. Heat oil till very hot and fry the chicken till golden brown. Remove and drain off excess oil.

  3. Use only 2 tbsp of the fried oil to fry the onions.

  4. Add the ginger-garlic mix and curry leaves to the onions.

  5. Fry till golden.

  6. Add the chicken, soy sauce, rice vinegar and mix; add chinese 5 spice powder.

  7. Mix well. Add the chili flakes and sugar and salt to taste.

  8. Cook till dry. Remove and serve with rice, soup and vegetables.
