Red Hot Mustard Chicken

Ingredients:


Chicken - 1.5 kg, cut into medium parts

2 Large Onions - cut into wedges

2" ginger - cut into fine strips

10 pips garlic - cut into fine strips

Ground 1" fresh saffron with 10-15 red chillies

2 tbsp Chinese rice vinegar + 2 tsp sugar

2tsp mustard seeds (toasted & pounded coarsely)

2 stalks lemon grass (crushed)

1 1/2 tsp salt or as desired

1 cup coconut milk


Method:


  1. Marinate chicken with ground chillies-saffron plus vinegar-sugar mixture for 1/2 hr.

  2. Heat oil and fry ginger-garlic strips until the smell rises.

  3. Add chicken pieces and salt, lemon grass and coconut milk.

  4. Cook till tender.

  5. Add onion wedges and stir well.

  6. Add pounded mustard seeds, stir well and leave for a few minutes before dishing out.
