Ingredients:
To Grind into Paste:
1 onion
3 cm ginger
6 pips garlic
1 Chicken (cut into parts)
2 tomatoes - ground separately
5 tbsp meat curry powder
1.5 tsp garam masala powder
1 tsp black pepper powder
2-3 potatoes - cut into chunks
1.5 cups coconut milk + 1 cup water
1.5 tsp rice vinegar
1.5 tsp salt
1 tsp sugar
3 sprigs curry leaves
1 small bunch fresh coriander leaves - chopped
Method:
Heat oil in a deep pot and when hot, crackle 1 stick cinnamon about 4cm, 3 cloves, 3 cardamon pods and 3 star anise.
Add ground ingredients and fry till fragrant
Add chicken and coat well. Then add coconut milk, water, vinegar, salt and sugar.
Add potatoes and cook till done.
Sprinkle curry leaves and coriander leaves.
Leave in pot for 1/2 hour.
Serve with rice or chapati.
