This is really an easy pizza to make. For one thing, we are using a ready-made store-bought pizza base. I usually make extra of the lamb mixture and keep it in the freezer so it's easy to throw together for a snack after school or a light lunch.
Ingredients: 1 ready-made pizza crust 2 tbsp tomato paste for sauce base ( I prefer using a simple salsa sauce) 1 cup loosely packed baby spinach (for a healthier option) 1 tsp dried parsley (or used a small bunch of chopped fresh parsley) 1/2 cup Mozzarella cheese - grated Spicy Mince Lamb Mix - combine loosely and leave aside for 1/2 hour 1/2 cup mince lamb 1/2 tsp chilli powder 1/2 tsp sweet paprika powder 1/2 tsp cumin powder 1/2 tsp black pepper powder 1/2 tsp onion powder pinch of salt Method:
Pre-heat the oven according to pizza crust baking directions. (It will be about 210°C for 10 minutes or thereabouts).
Lightly grease the oven tray and place the pizza base on it.
Lightly spread the tomato paste sauce around the base. I usually like to spread some garlic butter on the outer side of the base (around 2cm) before starting with the sauce. Don't over do it, or it will make the crust soggy and the flavours too strong.
Now crumble the spicy minced lamb mixture all over the base. Use only what you need as you don't want to overload this either. You can always freeze the balance for use on another day.
Scatter baby spinach over the mixture, sprinkle some dried parsley and then crumble the cheese over this.
A few drops of coconut or olive oil over the pizza and it is ready to go into the oven for about 10-12 minutes.
Remove from oven and cut it up while its hot (this works better to avoid the pizza breaking up, as the crust is still soft).
Let it rest for a few minutes before consuming.
Note: Tortilla works great as well.
