This recipe can be used for both chicken or pork.
Ingredients: 3 chicken breasts (deboned and cut into 1cm cubes) 2 tbsp pepper corns (crushed coarsely) 1 1/2 tsp fennel seeds 5 dry chillies - cut into 1 inch lengths
Method:
Lightly stir fry chicken cubes -put aside.
Leave 2 tbsp oil from fried chicken and put in crushed pepper corns and fennel seed.
Fry on very low fire.
Add dried chill and continue to stir before adding in ginger and garlic.
Pour in tamarind juice, salt and sugar.
Leave till almost dry, then add fried chicken, onions, chill powder and garam masala.
Continue stirring on low fire till dry.
Then add curry leaves and coriander leaves.
Taste for salt and sugar, then leave to cool.
