Banana Cake

A light, healthy and quick tea-time snack/dessert. Wait... it is healthy right?



Ingredients:


1 cup ripe banana - mashed (frozen banana is perfect for baking)

1/2 cup Greek yogurt

2 eggs

1/2 cup coconut cooking oil / 1/2 cup melted butter

1/2 cup brown sugar

2 cups all purpose flour

3/4 tsp baking powder

1 tsp baking soda

1/2 tsp salt




Method:


  1. Line 2 baking moulds with baking paper. Preheat the oven at 180 degree C

  2. Whisk banana, yogurt and eggs together.

  3. Mix in sugar and oil/butter.

  4. Fold in flour mixture in batches. Do not over mix.

  5. Transfer to baking moulds and bake for about 30 minutes.

  6. Stick a toothpick and if it comes out clean, the cake is down, otherwise bake for another 10 minutes

  7. If you want to make it glossy, lightly spread honey on top of the cake for the last 10 minutes of bake time.

  8. Allow to rest and cool, before cutting through.

  9. Keep balance in fridge.
